Part of what made this trip so fabulous were the guides. Here is a picture of Ross and I with our two native Italian guides, Federica and Simone. They were two spectacular people whom we hope we will see again some day! Behind us in this photo is Lake Trasimeno. We crossed the border to the Green Heart of Italy—Umbria and the blue waters of Lake Trasimeno, where Romans and elephants once roamed. The terrain was relatively flat and rolling, as we saw wheat and sunflower fields on either side of us. What a day that was!




   
   Ross was a great hill-climber on all of the rides. Sometimes he would    climb them twice, or even 3 or 4 more times when the rest of us had    enough with just one climb! He’s truly an Ironman!


   
   Here I am with our guide Simone, who is from Sardinia, Italy. He told    me he feels that Sardinia may also be my heritage. Hum? Maybe he    is my long lost cousin?

One of the highlights of the trip was having a cooking lesson in the kitchen of an Italian chef at one of the great restaurants in Arezzo. Here he demonstrates making Ribollita, a Tuscan vegetable and bread soup. Ribollita means “reboiled” which is part of the process in making this absolutely fabulous soup.





   
   The final product – ooh, this was one of my favorite food items on the    trip! I’ll provide you with a recipe for this at the end of this article!

It was very sad to say good bye to our new friends from this tour. Here is Nicole saying good bye to one of our guides Simone, as the rest of the group boards the bus to the train station.
